Chocolate Pecan Pie Bites

Packed with real, whole-food ingredients, these 5 minute, no bake, frozen pecan pie bites are the perfect treat for this time of year.


Thanksgiving is 3 days way and I haven’t even thought about a menu yet 🙃. Granted I’ve been in Israel for 7 years now, but I’m obsessed with thanksgiving food, so we still have to celebrate it. However, we don’t get any days off here to cook so I’m bringing the thanksgiving vibes with this 5 minute, frozen pecan pie bites recipe that are gluten free, refined sugar free, and just 6 ingredients! Pecan pie is pretty high on my list of favorite desserts in the world. Unfortunately, most are loaded with corn syrup, which I once loved but it did not love me back. So these are my liver-loving pecan pie bites that keep me in the spirit while also keeping my blood sugar balanced and feeling my best!


FYI- these will obviously not be sugar free if you use chocolate with sugar. You can keep them low sugar by using most chocolate bars with 85% or more cocoa, or check out Lily's for sugar free chocolate.

Ingredients:

For the chocolate drizzle:

  • half a bar of chocolate

  • 1 teaspoon coconut oil

Instructions:

  1. In a microwave-safe bowl, melt the coconut oil for about 20-30 seconds.

  2. In a food processor, combine pecans, coconut oil, pumpkin pie spice, honey, and oats in a food processor. Pulse until smooth.

  3. Stir in chocolate chips or chopped chocolate.

  4. Use your hands to roll the mixture into one-inch balls.

  5. Place on a baking tray lined with parchment paper and freeze.

  6. For the drizzle, melt coconut oil and chocolate together.

  7. Use a spoon to drizzle over the pecan balls or you can also dip them in for a higher chocolate ratio (which is always a good thing)

  8. Enjoy!
