This granola is the perfect snack- it's crunchy, has a hint of sweetness, but unlike most granolas this one is full of healthy fats and low in sugar and carbs so it will actually keep you feeling full and prevent a blood sugar spike and crash.

Ingredients:
1 cup pecans, chopped
1 cup large, raw, unsweetened coconut flakes
1 cup slivered almonds
1/2 cup almond flour
3 Tbsp melted coconut oil
1 egg white
2 tsp cinnamon (use ceylon cinnamon if possible- it's great for blood sugar balance)
1/2 tsp honey, optional

Instructions:
Preheat the oven to 325°F or 170°C.
Roughly chop pecans and add to a bowl.
Add coconut flakes, cinnamon, and almond flour and mix.
Pour melted coconut butter, honey, and egg white over the mixture and toss with a spoon until thoroughly coated.
Bake for 15 minutes, then toss with a spoon, and bake for another 5-10 minutes depending on how crunchy you like it.
Enjoy as a snack or as a topping for smoothies or yogurts.
