Some days I'm happy to spend 3 hours cooking. Some days I want to spend as little time in the kitchen as possible. This is barely even a recipe but it's the perfect lunch for busy work days or when you just can't be bothered to stand by the stove to cook dinner. Just remember to defrost your salmon if you're using frozen so that this takes even less time. If you don't have access to either this spice blend or the cruciferous veggies mix, it's easy to make your own delicious spice blend in bulk to have ready to go for prepping proteins and any pre-washed and precut bag of mixed greens can work here.

Ingredients:
2 cups Trader Joes cruciferous mix (baby kale, cabbage, shaved brussel sprouts)
1 filet of salmon
1 tsp Trader Joes Citrusy Garlic blend
1/2 an avocado
1 Tbsp seeds of your choice (I used pumpkin and sunflower)
Dressing:
1/4 cup olive oil
1 tsp citrusy garlic blend (or salt, pepper + lemon juice if you want something more tame)
Instructions:
Preheat oven to 180°C or 350°F.
Generously season salmon with the spice blend.
Bake for 20 minutes, or until cooked to your liking.
While that's baking, add 2 cups of the cruciferous mix to a bowl. Add avocado and seeds.
Combine dressing ingredients.
Add salmon to salad when done.
That's it! Could it be any easier?
