Happy September!!! Fall is here!!!!!!! (I think?? Even if not officially- it FEELS like it's here) Get ready for tons recipes featuring all the warm cozy spices, hearty comfort dishes, and the delicious seasonal squashes and PUMPKINS! This season has always brought my favorite foods. I always loved anything thanksgivingey and was a sucker for any pumpkin-spiced version of cereals and snacks. One of my absolute favorite things was this pumpkin-spice flavored frozen yogurt that I used to get at 16 handles. I would top it with graham cracker crumbs and whipped cream and have a whole pumpkin pie situation in a cup and it was amazingggg. But it also probably contributed to my pancreas's super stressful job of trying to clear sugar out of my bloodstream and never being able tokeep up with the volume of sugar I was bringing in on a daily basis.
I'm always on a mission to try and recreate healthy versions of foods that I used to love to eat before being diagnosed with PCOS and diabetes. This Pumpkin Spice Smoothie totally satisfies that craving for something delicious and pumpkin-y at the beginning of the fall season where it's actually still 90° outside in Israel.
Ingredients:
1 scoop vanilla protein powder
1 cup almond milk
1/3 frozen banana, (for sweetness)
1 tbsp pecan butter (you can sub almond butter)
1/2 cup pumpkin (I used canned pumpkin pureé)
1/2 tsp cinnamon
1/2 tsp nutmeg
1/2 tsp cloves
1/2 tsp ginger
1/2 tsp allspice, optional
handful of ice
Full cinnamon stick for decoration if you want to be extra
Instructions:
Add all ingredients to a blender and blend to combine.
Put on a cozy sweater and enjoy!
