I almost feel like I'm cheating by posting this because it's barely a recipe. Just 4 ingredients! But aren't those actually the best recipes of all? I love raw purple cabbage in a salad but the roasted version is next level delicious! Cabbage is so underrated. It's EASY to clean and cook, it's BEAUTIFUL when you cut into it and see the swirly-psychedelic pattern, it's usually pretty INEXPENSIVE and it's a NUTRITIONAL POWERHOUSE! Cabbage is loaded with Vitamins C, K, A and B6 which help your immune system and it's rich in anti-oxidants (anthocyanin, sulforaphane, and kaempferol) which fight inflammation! This makes it an easy, delicious, nutritious go-to side dish!

Ingredients:
1 red cabbage
2 Tbsp olive oil
1 tsp salt
1 tsp pepper

Preheat the oven to 190 C or 375 F.
Thinly slice cabbage and place on a baking tray lined with parchment paper.
Pour oil, salt, and pepper over cabbage and toss to coat.
Bake for 30 minutes, or until caramelized and crispy.
Pro tip- drizzle some raw techina on top for extra flavor and deliciousness.
