Roasted Purple Cabbage

I almost feel like I'm cheating by posting this because it's barely a recipe. Just 4 ingredients! But aren't those actually the best recipes of all? I love raw purple cabbage in a salad but the roasted version is next level delicious! Cabbage is so underrated. It's EASY to clean and cook, it's BEAUTIFUL when you cut into it and see the swirly-psychedelic pattern, it's usually pretty INEXPENSIVE and it's a NUTRITIONAL POWERHOUSE! Cabbage is loaded with Vitamins C, K, A and B6 which help your immune system and it's rich in anti-oxidants (anthocyanin, sulforaphane, and kaempferol) which fight inflammation! This makes it an easy, delicious, nutritious go-to side dish!



Ingredients:

  • 1 red cabbage

  • 2 Tbsp olive oil

  • 1 tsp salt

  • 1 tsp pepper

Instructions:

No filter- love this gorgeous natural color
  1. Preheat the oven to 190 C or 375 F.

  2. Thinly slice cabbage and place on a baking tray lined with parchment paper.

  3. Pour oil, salt, and pepper over cabbage and toss to coat.

  4. Bake for 30 minutes, or until caramelized and crispy.

  5. Pro tip- drizzle some raw techina on top for extra flavor and deliciousness.

  6. Enjoy!
