Taco Salad

This salad is family favorite and is always such a crowd pleaser because it's one of those salads that doesn't really feel like a salad. But it's not only a great combo of flavors and textures- it's full of nutrients that help balance your hormones and boost your fertility too.


Here's why:


Ground beef is a great source of protein, which is essential for keeping our blood sugar balanced. Ground beef is also a great source of minerals such as iron, zinc, phosphorus, selenium, as well as vitamins B6, B12, and B3. These vitamins and minerals are essential for proper hormone functioning and boosting egg quality. For the best health benefits, ideally try to get the highest quality beef possible- grass fed, organic, and pasture raised.

If you follow me, you know I love to sneak liver into any ground beef dish because liver is a fertility and hormone superfood! It's the most concentrated source of iron and is also rich in folate, choline, and B vitamins that are crucial for healthy hormones and boost your egg quality.

Black beans are full of antioxidants, fiber, protein, and complex carbohydrates. Fiber is key to helping our body eliminate waste products, such as old, used, hormones, so they're a great addition to any meal, but they go especially well in this taco salad.

Corn is not the most nutrient dense vegetable, but it does contain some fiber and vitamin c, and is full of energy-providing carbohydrates.

Avocados are rich in many nutrients including fiber, healthy fats, vitamin C, vitamin E, vitamin B6, potassium, magnesium, and folate, plus antioxidants that fight inflammation, such as lutein.



Ingredients

Not the best pic because I was in a rush to eat it!

For the meat:

1 tbsp olive oil

1.5 lbs of ground beef

2-4 oz cooked liver*

1 white onion

1/2 cup red bell pepper

3 cloves of garlic, minced

1tsp paprika

1tsp coriander powder

1tsp chilli powder

1tsp cumin

1 tbsp oregano

1 tbsp onion powder

1/2 tsp cayenne pepper (optional)

1 cup water

Salt and pepper to taste


For the Salad:

2 cups of Romaine lettuce

1/2 cup black beans (can be canned or homemade)

1/2 cup corn (can be canned or homemade)

1/4 cup cherry tomatoes

1/4 cup cucumber

1/2 avocado sliced thinly


For the dressing:

1/4 cup mayonnaise (Use avocado oil or olive oil based mayo)

1 tsp salt

1 tsp black pepper

2-3 tbsp canned crushed tomatoes

1 tsp white vinegar

1 tbsp mustard

1/2 tsp garlic powder

Juice of 1/2 lemon


*Note about liver: I only use cooked liver in recipes in order to adhere to the religious dietary obligations of keeping kosher. If you don't keep kosher, there is no reason the liver needs to be cooked in advanced


Instructions:

  1. Dice the onions and red pepper.

  2. Sauté in olive oil until soft.

  3. Add the ground beef, and all the spices, along with 1 cup of water.

  4. While the beef mixture is cooking, chop up the lettuce, cucumbers, tomatoes, and avocado and add to a bowl.

  5. Add in the corn and beans.

  6. When the meat mixture is cooked through, remove from heat and let cool.

  7. Combine all of the dressing ingredients in a small bowl or jar and mix until combined.

  8. Assemble the salad, add the meat and drizzle the dressing over the top.

  9. Enjoy!
